胖头鱼鱼头(也叫大头鱼,花鲢) | 一个(1.2斤左右) |
嫩豆腐 | 一盒 |
葱 | 一小把 |
姜 | 一块 |
盐 | 4克 |
枸杞 | 20-30粒左右(可不准备) |
料酒 | 100毫升 |
鱼头豆腐汤的做法
准备材料。鱼头一定要现杀的。如果买不到盒豆腐就嫩豆腐也行

均匀淋入料酒,然后再均匀的撒一层薄薄的盐,这里大概用1克盐,剩下的3克出锅放。腌制20分钟。这里大概用掉15-20毫升的料酒。剩下的待会儿放

找一口旧不粘锅放上菜籽油,别用新的不粘锅,因为鱼头里面的刺很容易就把涂层刮坏了

等待料酒烧干的时候我们把姜切片,然后把小葱的葱白切一点下来。很多人都是这个直接把整捆葱放进去煮,等汤好了葱也黄了,这不符合我的颜值高的要求。但又不能不放,所以我们把葱白切下来先放进去煮出香味来
