鸡爪 | 1斤 |
酱油(生抽) | 150毫升 |
白醋 | 75毫升 |
麻油 | 适量 |
糖 | 4-5勺 |
鸡粉 | 适量 |
小米椒 | 适量 |
蒜头 | 2个(不是2瓣) |
自制凉拌蒜香鸡爪的做法
切蒜蓉,小米椒切粒

清洗干净鸡爪,把脚趾切了,鸡爪对半切,再用清水洗几次,沥干水

开始煮鸡爪,放料酒姜,一点盐煮,鸡爪煮熟(水煮沸后大概7-10分钟)

用凉开水清洗干净煮熟的鸡爪,沥干水

用冰镇过的凉开水泡半小时(用冰镇过的水泡是为了让鸡爪爽口)

麻油煮热,放入蒜蓉爆香

倒入酱油醋糖鸡粉糖,刚开始少量加糖,我家勺子比较小加4-5勺,觉得太酸了就继续加糖,一边调一边试,调好味道加入小米椒

煮沸关火放凉

把泡在冰水的鸡爪沥干水份倒入酱料中翻拌均匀

装保鲜盒放冰箱冷藏(冷藏4小时翻面,然后泡过夜)

如果觉得酱料有点少,可以在煮多点酱料或者是加水煮开,用盐调咸度(我一般都是按照配方的酱料,经常翻拌入味)
