在家躲疫情,闲来无事,鼓捣鼓捣吃炸串,炸串的灵魂就是面糊的调制,面糊调的好,万物皆可炸。至于抹的酱,那就看个人口味了。今天主要记录一下面糊的调制和蘸料的调制。

用料
鸡蛋 | 2个 |
盐 | 少许 |
清水 | 适量 |
面粉 | 适量 |
香油 | 1个鸡蛋的量 |
辣椒细粉 | 1勺 |
辣椒粗粉 | 1勺 |
熟芝麻 | 1勺 |
熟花生碎 | 1勺 |
五香粉 | 半勺 |
花椒粉 | 半勺 |
味精 | 适量 |
白糖 | 半勺 |
孜然粉 | 1勺 |
好吃的炸串的做法
面糊的调制:
2个鸡蛋,香油大概是1个鸡蛋的量,一点点盐,一碗清水一起搅拌,然后一点点加面粉搅拌,面粉和蛋液水的比例大概是1:1左右,边加边搅拌,面糊要调的偏稀,一般刚刚能挂住糊就行,这样的面糊又香又脆

蘸料的调制:
辣椒细粉,辣椒粗粉,炒熟的芝麻,炒熟的花生碾碎,五香粉,花椒粉,孜然粉,白糖,1小勺盐,少许味精混合在一起,用烧开的热油浇在上面,搅拌匀即可
准备食材,穿串备用

像藕片这样的食材可以不穿串,直接挂糊炸
