南瓜(生的去皮去瓤) | 250g |
糯米粉(不可用各类面粉替换,口感会硬) | 150g |
玉米淀粉 | 40g |
砂糖 | 50g |
Q弹南瓜饼的做法
南瓜切成小块,放入锅中隔水蒸熟,十分钟就可以了,

用擀面杖之类的东西把煮熟的南瓜捣成泥,

用筛网或者纱布挤出多余的南瓜汁

将糯米粉,淀粉,砂糖,一次性加入南瓜泥里,揉成面团,按照我这个量的话面团柔软度刚刚好,容易塑型,

揉好的面团是光滑略有硬度的,太软的不好成型,这里说一下大家可以按照配方预留出10到20g糯米粉,然后根据面团柔软度适量添加,

将面团分成25g到30g左右的小面团,

包入巧克力或者其他馅料,据说果酱不太好包,我是德芙直接掰块,然后封口再次揉圆,上面轻轻压扁,

压扁后用牙签压出三道线,力度稍微大点,以免蒸熟了痕迹变浅

压出三道线以后,用牙签在两侧稍微整形

装饰南瓜柄,这里可选材料就比较多了,黄瓜皮,葡萄干,枸杞,话说我用的是柠檬皮。。

用油纸垫好,或者刷一层油,防止粘住,留一定间隙,入锅,

冷水蒸8到10分钟即可。这里还要说一下(我好啰嗦)⸜(´ ˘ `∗)⸝蒸熟后一定晾最少五分钟,这样不沾手不沾筷子!我用油纸从来没沾过……
