鸡爪 | 2斤 |
生姜 | 1大块 |
大蒜 | 8瓣 |
花椒 | 40粒 |
八角 | 1个 |
小米辣 | 3个 |
干红椒 | 2个 |
生抽 | 200ml |
醋 | 20ml |

生姜切丝切末随便你,大蒜、小米辣、干红椒也切碎,再准备一把花椒一颗八角 (我没有切太碎是因为不喜欢吃的时候爪子上黏满了香料小颗粒,影响口感)根据自己喜好的麻辣来放花椒和小米辣的量哈

生抽酱油准备一碗,大概一斤鸡爪要用到100ml的量(能用来凉拌的酱油都可以、比如一品鲜啊味极鲜啊等等)醋根据自己口味来放,或者你放柠檬也行

冷水入锅没过鸡爪,加一点料酒、一小撮花椒、几片姜,大火烧开后、开盖煮五六分钟关火焖三分钟 (煮久了就不Q弹也没有嚼劲了

捞出后立刻冷水冲洗浮沫直至冷却,把里面煮过的姜片花椒捞出丢弃,然后把鸡爪控干水分倒入比较大的容器备用,用大容器会方便你等会搅拌

起锅烧油,油热后倒入所有香料中小火炒出香味
