紫甘蓝为什么会变色?因为紫甘蓝汁含有花青素,花青素会随着PH值不同而变色,在酸性条件下变红,在碱性条件下变蓝。所以紫甘蓝加醋(宜用白醋,黑醋本身有色,会影响色彩)或柠檬汁会变红;加小苏打会变蓝。前者美食爱好者运用较多。

紫甘蓝洗净,摘两片叶子,切成小碎块
