台山粽的做法
备料!
五花肉切块,用盐和五香粉腌,加入切好的红榄,备用;
糯米洗干净,放适量盐,加花生米,拌匀:
瑶柱、虾米洗净备用;
腊肠切片备用;
咸蛋黄切半备用。

准备一个大锅,烧开水,热水下粽子,水要完全没过粽子,大火煮。
每两小时翻一下粽子(把下面的和上面对换,为了让粽子均匀受热),煮5-6个小时,出锅

粽子一定要用五花肥肉!经过六个小时高温蒸煮,肥肉入口即化,猪油渗入粽子的每个角落!
台山人一般将肥猪肉伴上剁碎轻炒的红丝线,用来作为“台山咸肉棕”的香料,腌制过的肥猪肉能发出很特别的香味,红丝线有清肺止咳的作用!
瑶柱和虾米的鲜味,咸蛋黄的咸香味,腊肠的甜味,啊!一定会吃了再吃!
