带皮五花肉 | 1600g |
米酒 | 240g |
绍兴花雕 | 80g |
生抽酱油 | 240g |
红烧汁 | 50g |
洋葱酥 | 100g |
冰糖 | 120g |
五香粉 | 1茶勺tsp |
白胡椒 | 1茶勺tsp |
盐 | 适量 |
高汤 | 1L |
鸡蛋 | 6个 |
台湾卤肉 台湾卤肉饭Braised Pork Rice的做法
准备食材

准备食材

将带皮五花肉洗净。准备一只深汤锅倒入足够的凉水,把五花内到锅里。用大火烧开后继续煮10分钟,取出肉放凉备用。

煮好的五花肉切成1CM见方的长条,鸡蛋煮熟备用。

炒锅里倒入一点点油,将切好的肉倒入炒锅里中大火煸炒直到返出大量油后,将肉用笊篱盛出来,油控在另一个碗里(可做其他使用)。

将炒好的肉重新倒入炒锅里,中大火,加入米酒、绍兴花雕、生抽酱油、红烧汁、冰糖、五香粉、白胡椒炒匀后加入洋葱酥。

等锅开起来将所有材料倒入汤锅中加入高汤和水,用大火烧开后转小火焖煮2小时左右。

半程时加入煮好的鸡蛋,再按自己的口味加入适量的盐调味。

煮好的卤肉卤蛋搭配米饭,再烫一个小青菜一起食用最佳。

1. 选用带皮五花肉煮出来的卤肉汤汁才会更浓郁。2. 炒五花肉时尽量把油炒出来,这样做出来的卤肉才不会油腻。
