手握寿司和反卷寿司(寿司醋的配方)的做法
我们先来做寿司醋,盐砂糖白醋的比例是1:6:10,我家比较甜口一点,不喜欢的也可以适当减少糖的比例。

盐砂糖和白醋按比例倒入容器中,微波炉加热至砂糖融化就可以了,放温就能用了,一次可以多做点放着也不会坏。

开始准备煮米饭,我喜欢大米中加三分之一圆糯米,首先来淘米,米要淘洗十遍左右,轻轻的淘洗就可以,以便清除大米的粉浆和异味,使做出来的寿司口味和口感更好。

准备做寿司的食材;

双手沾寿司醋,取米饭大约18~20g,放在左手中,用右手的食指和中指压成图片中的样子,一边压一边转动饭团,压得紧实一点更好吃,

下面来做一卷反卷寿司,竹帘上铺好保鲜膜;

铺上一张海苔,均匀的铺上米饭;

均匀的撒上樱花粉,没有樱花粉撒上炒熟的黑芝麻也可以,再盖上一张保鲜膜并压实;

把铺好的米饭翻个身,海苔面朝上并撕去保鲜膜,放上食材,靠近自己的一边空个2公分不要放食材,这样更好卷;

借着竹帘将其卷起,一边卷一边拉着竹帘往前卷,一定要卷紧,不然等下切开时会散掉;

卷好后固定一会儿再切;

用快刀切件,每切一刀用湿厨房纸把刀擦干净再切下一刀,这样切出来的寿司很漂亮。
