用料
毛豆 | 600克 |
花椒 | 20粒 |
盐 | 4勺 |
香叶 | 3-4片 |
八角 | 1个 |
桂皮 | 1块 |
干辣椒 | 4个 |
食用碱 | 2勺 |
卤水毛豆的做法
毛豆洗净,第一遍先加两勺食用碱,煮到锅内水开后,2分钟关火,毛豆过凉水;

将降温至不烫手的毛豆剪掉两头(便于卤煮入味)

准备如上卤料

将准备好的卤料和4勺盐加入锅内(调料可随食物的量增减)

水开,煮8-10分钟关火,然后一直在锅内不用捞出,浸泡4小时后可以食用,放冰箱冰镇一下更好吃????
