阳春三月,正是吃蚕豆(也叫胡豆)的好季节,家里的小朋友喜欢剥豆豆,经常买,于是我就变着花样做,这道菜的灵感来自于金沙玉米。金黄的咸蛋黄搭配蚕豆的翠绿,漂亮极了,咸香伴着清香,老少皆宜。

用料
蚕豆 | 适量 |
咸蛋黄 | 适量 |
鸡蛋 | 适量 |
淀粉 | 适量 |

有颜有味的金沙蚕豆的做法
新鲜蚕豆,剥掉外壳和内皮,顺着纹路,掰成两瓣。

咸蛋黄,喷白酒(去腥),烤熟(180度,10分钟),蒸熟或煮熟也行,用勺子压成泥。

开水下锅,氽2分钟。

捞出沥干。

我先开始忘记掰成两瓣了,这一步掰没生的好掰。

加入适量的鸡蛋,不可太多,能挂上粉就行。

炸5分钟,勤翻面。

不停翻炒。

炒到这样就差不多了,可以尝一下咸淡,如果咸蛋黄够咸,就不用再放盐,否则再放少许盐。

捞出锅,锅底还会有少许油和咸蛋黄,用来炒饭,也是棒棒哒。豆豆上的小泡泡,晾凉,就会自动消失。
