全麦面粉 | 200克 |
酵母 | 3克 |
水 | 120克 |
盐 | 2克 |
100%全麦无油无糖口袋饼(pita皮塔空心面包)的做法
3克酵母和120克38°以下水温的温水搅匀(可以加3克白糖帮助发酵哦)

3克盐和200克全麦面粉搅散(有馒头改良剂的可以放1.5克,没有的忽略哦)

酵母水少量多次加入面粉中,搅成絮状

手揉成光滑的面团(无需出膜)

盖上保鲜膜,发酵至2-3倍大后,取出揉面排气,分割成大小均匀的面团

揉成合适的大小(大小可按自己喜欢,我揉了5个面团哦),盖上保鲜膜,醒发20分钟

烤箱预热230°(温度可以按自己烤箱脾气来,温度尽量调高哦,一般在200°-230°左右)

案板上抹层薄薄的全麦面粉防黏,将醒发好的面团揉压擀成椭圆形或圆形(厚度约5mm,不要太厚也不要太薄)

其实方形也是很可爱哒,就是四个角不容易膨胀鼓起来哦(现在是扁的,进烤箱高温烘烤后它会自己鼓起来的)
