用料
千张 | 1-2张 |
胡萝卜 | 半根 |
小葱 | 1-2根 |
蒜瓣 | 4-5瓣 |
干红辣椒 | 4-5个 |
青椒 | 1个 |
生抽 | 适量 |
香醋 | 适量 |
耗油 | 适量 |
香油 | 适量 |
糖 | 一勺 |
盐 | 适量 |
鸡精 | 少许 |
五香粉 | 少许(可不放) |
食用碱(或小苏打) | 少许 |
凉拌干丝(千张丝)的做法
1.千张、青椒、胡萝卜、蒜瓣、干红椒、小葱洗干净备用

2.千张切好备用

3.清水烧开,放少许食用碱或小苏打(量要少)

4.将切好的千张放进去煮3分钟左右

5.捞出,控干水分备用

6.胡萝卜切成丝

7.准备一个稍大些的碗,将胡萝卜和干丝放进去备用

8.将小葱切成葱花备用

9.做料汁1,将蒜瓣切碎,青椒干红椒尽量切小,全部装在一个碗中,锅中倒油烧热,微微冒烟时,浇到碗里,炸出香味

10.做料汁2,将糖、盐、生抽、醋、蚝油、鸡精、五香粉,部分葱花全部放进一个碗里,搅拌均匀

11.将料汁1倒入料汁2中,搅拌均匀

12.据自己的胃口,放入适量的料汁搅拌均匀(没有用完的料汁,可以留着下次使用,拌面、拌凉菜都可以)
