用料
南瓜泥 | 200克 |
白糖 | 10克 |
酵母粉 | 2克 |
中筋面粉 | 200克 |
鸡蛋 | 2个 |
南瓜发糕的做法
南瓜蒸熟,去掉多余的水,用料理机搅拌成泥,取200克南瓜泥

南瓜泥稍微放凉一下,加入10克白糖,2个鸡蛋搅拌均匀

再加入2克酵母搅匀

加入过筛的面粉搅成粘稠状(因为南瓜的含水量,面粉的吸水量各不相同,根据实际状态可以添加点水或者面粉)

粘稠状如图,盖上保鲜膜进行发酵,我是夏天天气35℃,常温下发酵了45分钟

发酵成2倍大

扒开有蜂窝组织

然后把发酵好的顺时针搅拌一会,排气。大碗里抹上点食用油,倒入南瓜糊

放入适量的果干,放入蒸锅再发酵25分钟,发酵8分满即可,然后大火蒸30分钟,关火后焖3分钟再揭锅。
