将蛋黄蛋清分离,做蛋黄酱只用蛋黄

将分离好的蛋黄放在一个无水无油的碗里

用打蛋器打发至体积增大,颜色变浅,放一边备用(必须是电动的打蛋器,手动不行)

将牛奶倒入锅中,用最小火加热至微微冒泡,然后关火(不要太热,不用烧开)

倒入刚刚打发过的蛋黄酱,加入5克盐,搅拌均匀

开最小火慢慢熬,期间必须不停搅拌

开始变得浓稠之后要往下压着搅拌,防止有大颗粒(要用翻拌的勺子,图片上这种,筷子和硬的勺子都不行)
