2. 混合蛋清和蛋黄面糊的时候如果发现蛋清很难拌均匀,呈现一小坨一小坨的状态 就说明蛋清打发过度了

分离蛋黄蛋清,在蛋黄中加入一大勺糖打散

往蛋黄中慢慢倒入油,边倒边搅拌,接着加入牛奶

加入盐和香草精,筛入面粉拌匀成蛋黄面糊

蛋清打发出粗泡,加入一半的糖

将蛋清打发至干性发泡。烤箱预热160°C

1. 分离蛋黄蛋清时要注意不要在蛋清中混入蛋黄或油脂2. 混合蛋清和蛋黄面糊的时候如果发现蛋清很难拌均匀,呈现一小坨一小坨的状态 就说明蛋清打发过度了
