中筋面粉 | 300克 |
细砂糖 | 8克 |
酵母 | 3克 |
玉米油 | 10克 |
水 | 155克 |
花卷 一次发酵松软好吃 造型简单 最近花卷馒头当道的的做法
所有配料混合一起揉成光滑的面团,盖上保鲜膜醒发10分钟。(手工揉面建议揉10分钟/厨师机揉面建议用一档揉6分钟/面包机揉面程序建议揉15分钟)

醒发好的面团平均分成6份,每个约80克

取一个剂子搓成长条状

再擀成长约26厘米,宽约8厘米的长方形;

表面刷薄薄一层油,再撒点盐,最后撒点干面粉;

从尾部开始卷,尾部压在下面;

依次整形完毕放入蒸锅,将水烧至约38度,开始发酵;

发酵约30-40分钟,如图状态即可开火蒸,大火烧开转中火蒸10分钟。关火5分钟后揭开锅盖出锅。
