上海色拉是一道具有历史记忆的菜,在七八十年代的上海非常流行,是洋派的一种象征。和炸猪排、罗宋汤一起构成上海人家家常菜单中‘洋派’的一部分。也是当时一般西餐馆中最著名的一道菜。

上海色拉的做法
土豆洗净,入冷水锅中煮开

转中小火煮至筷子能较轻易插入,关火取出
