蛋黄 | 55克 |
全蛋液 | 155克 |
牛奶 | 150克 |
淡奶油 | 25克 |
酵母 | 5克 |
黄油 | 60克 |
软化黄油装饰表面 | 适量 |

整理成圆形,这一步可以按照常规先进行一次发酵,发酵好后再分割成六等份

也可以和我一样提前分成六等份再去发酵。优点就是这样后续整形面筋更为连贯,缺点就是占地方,发酵的时候要保证面团之间不粘连。一发28度湿度80%

发酵好的面团用剪刀在三峰上各剪一个口子

烘烤我用的EAT-610的风炉,和我以前用的600风力不太一样,用时短,150度28分钟就烤好了,但是其余烤箱请参考自己的适宜温度来操作,品牌不同温度不同,没有办法给出绝对准确的温度,普通烤箱可参考上火150,下火190,下层烘烤30-32分钟左右。烘烤的时候记得放在烤盘上,接油~
