排骨3根,话梅10颗,姜片3片,陈皮(可祛腥解腻)
????料酒、老抽各1勺,生抽、香醋各2勺,冰糖1小把(约50g),盐1小小半勺,蜂蜜1~2勺。

㊙️做法:
????话梅用水泡着。
????焯水:排骨冷水下锅,煮开后煮2、3分钟,煮出血沫,捞出洗尽沥干。

????锅里放油,油热后加入冰糖,慢慢炒化,炒至琥珀色。(炒至过程状态如图)倒入排骨翻炒均匀上色。

????放入姜片,生抽、老抽、醋、料酒,翻炒均匀后,

????加清水没过排骨,放入陈皮,

大火煮开后盖上锅盖转中小火,焖煮40分钟。
加少许盐,然后大火收汁(根据锅里还剩汤的多少决定收汁时间),
