大肘子做法的做法
今天忽然想做肘子,楼下市场买了一个三斤的,据说应该是前肘。

先用我的小刀把肘子一侧剌开,这样比较入味儿~

焯水,里面放了墩墩墩三下料酒,出沫子了再煮个两分钟,捞出用水冲干净,凉水就行。

放油烧热化冰糖9粒

建议可以放点儿藤椒,这是第一次尝试,效果很好啊,藤椒有清香味儿,去腻~

我一般都是化冰糖的时候炒料,佐料一定要炒一下,出来的肉,就不会料的味道特别生硬~

等糖色冒泡泡了,把肘子放进去,说实话,肘子太大,糖色有点儿裹不全,,但是也能上点儿颜色。

然后就把料给肘子都裹匀,我就把它摆了个这个姿势,用铲子浇了一遍料~

高压锅,烧水,温热的时候就行。

把肘子放进去,连同炒锅里的所有东西都倒进去。这么看着颜色就很好看了哈,水莫一半肘子就行,盖盖,开中火,等高压锅滋滋滋的时候计时半个小时。放半个小汤勺盐。
