清代诗人袁枚在《随园食单》中写过这么一道菜品,“用精肥参半之肉,炒米粉黄色,拌面酱蒸之,下用白菜作垫,熟时不但肉美,菜亦美。以不见水,故味独全。江西人菜也。”粉蒸肉以其糯而清香,嫩而不糜,米粉油润,香味浓郁,流传于各大菜系,经久不衰。根据烹饪方法,可以偏辣,可以偏甜,配料可以辅以香菇、老藕、红薯土豆等蔬菜。如今可以买到现成的蒸肉米粉,做起来就更加简单了。

五花肉 | 300克 |
料酒 | 2勺 |
酱油 | 2勺 |
生抽 | 1勺 |
老抽 | 半勺 |
鲍鱼汁 | 1勺 |
白糖 | 5克 |
土豆 | 1个 |
蒸肉米粉 | 125克 |
清水 | 50克 |
糯而清香肥而不腻的粉蒸肉的做法
首先,选一块上好的五花肉放入冰箱冷冻十五分钟到稍硬时取出,连皮一起切成薄片,稍微厚一点即可;

加入料酒去腥

通常市售的米粉已经加好了香辛料和盐,腌肉不用额外加盐
