这道豉汁鳗鱼在闽南有些地方的酒席上几乎是必上的一道菜
也是我每次吃酒席最期待的一道……
乱捣鼓试出来的味道,几乎没差

用料
豆豉 | 爱吃就多放 |
姜 | 3 |
油 | 适量 |
胡椒粉 | 一点点 |
盐 | 一点点 |
白糖 | 一点点 |
蒸鱼豉油 | 小半碗 |
生粉 | 一点点 |
料酒 | 1勺 |
清蒸鳗鱼(豉汁)的做法
鳗鱼叫商贩杀好切好(如果自己切就切薄点,比较入味),放姜丝,料酒,盐,白胡椒粉,生粉(可放可不放)腌制一会。(要腌制肉才不会柴)

准备一瓶豆豉,随便什么牌都行

看鱼多少舀出一些豆豉跟豉汁

用勺子压成泥备用

切点姜末备用

起锅烧油(小锅就好),放姜末爆香

放入压好的豆豉炒几秒出香味

放进小半碗蒸鱼豉油

就这样炒一会出大泡(也可以放点白糖增鲜,一丢丢就好啊,放多了变成甜的了

鳗鱼拿出来铺在盘子上

把炒好的豆豉舀上去,要带油淋上去,没油不好吃,完了放点姜丝(或者也可以把豆豉酱倒进去碗里搅拌完再摆盘),鳗鱼一次吃不完的话可以腌制好直接放冷冻,要吃了直接解冻完蒸就行,一样好吃。

蒸锅放水烧开,水开了再放鱼蒸昂,蒸个十分钟左右就可以了,完了看你要不要泼油都行。
